KERALA STYLE VEG STEW




INGREDIENTS

  • Carrot (Cubed) : 1 
  • Potato (Cubed) : 1
  • Green Peas : 1/4 -1/2 cup
  • Onion (Sliced finely) : 1
  • Green chilly : 4-5
  • Ginger garlic paste : 1 tbsp
  • Gram Masala : 1/2 tsp
  • Thick coconut milk : Taken from one full coconut
  • Curry leaves
  • Oil
  • Salt : as needed

PROCEDURE

  1. Pressure cook the vegetables. After first whistle lower the flame and cook for 2 mins
  2. Heat oil in a deep bottom pan & splutter the gram masala.
  3. Add the onion, ginger garlic paste, curry leaves & green chilly and saute for a few minutes till the onion becomes soft/transparent. Don’t make the onions brown.
  4. Drain the water from vegetables. Add the cooked vegetables & combine well.
  5. Add thick coconut milk, bring to boil, reduce heat; simmer and cook for 10 mins approx.
  6. Before switching off the stove, add salt and cook for 2 mins.
  7. Garnish with curry leaves fried in coconut oil or ghee.
