KERALA STYLE VEG STEW
INGREDIENTS
- Carrot (Cubed) : 1
- Potato (Cubed) : 1
- Green Peas : 1/4 -1/2 cup
- Onion (Sliced finely) : 1
- Green chilly : 4-5
- Ginger garlic paste : 1 tbsp
- Gram Masala : 1/2 tsp
- Thick coconut milk : Taken from one full coconut
- Curry leaves
- Oil
- Salt : as needed
PROCEDURE
- Pressure cook the vegetables. After first whistle lower the flame and cook for 2 mins
- Heat oil in a deep bottom pan & splutter the gram masala.
- Add the onion, ginger garlic paste, curry leaves & green chilly and saute for a few minutes till the onion becomes soft/transparent. Don’t make the onions brown.
- Drain the water from vegetables. Add the cooked vegetables & combine well.
- Add thick coconut milk, bring to boil, reduce heat; simmer and cook for 10 mins approx.
- Before switching off the stove, add salt and cook for 2 mins.
- Garnish with curry leaves fried in coconut oil or ghee.
