Pressure cook the vegetables. After first whistle lower the flame and cook for 2 mins
Heat oil in a deep bottom pan & splutter the gram masala.
Add the onion, ginger garlic paste, curry leaves & green chilly and saute for a few minutes till the onion becomes soft/transparent. Don’t make the onions brown.
Drain the water from vegetables. Add the cooked vegetables & combine well.
Add thick coconut milk, bring to boil, reduce heat; simmer and cook for 10 mins approx.
Before switching off the stove, add salt and cook for 2 mins.
Garnish with curry leaves fried in coconut oil or ghee.
